That part is a bit difficult since english and chinese are both official languages there. Most people speak english although cantonese is the language you will hear all around. But english is the medium of instruction.

The two official languages in Hong Kong are Cantonese and English. I didn't learn or spoke Cantonese. Most courses were in English, everthing (incl. streetsigns, MTR announcements, official formulars, and so on) are always in both languages! Most people in HK speak or at least understand English. All of the academic staff is very profound in the use of the language. The young people in general, especially the students, speak English very well. Therefore I did not experience any language difficulties.

Don't miss the night markets in Temple Street and Mong Kok. Go for some fun in Lan Kwai Fong and Wanchai (pubs&clubs) but don't get hooked. Try the peace of outlying islands like Lantau or Lamma.

I wish I had known...
Not really. Of course there are unexpected things...but part of the experience is figuring out how to deal with the unexpected.

Final comments
I had the best five months of my life at HKUST and met some absolutely incredible people. My only regret is that I only went for a semester and not a full year.

I tried to learn some basic phrases, but oftentimes failed to pronounce them correctly. Pronounciation was most difficult, but people generally appreciated my efforts to speak their language.
