Course recommendations
The only recommendation that I have is with the Italain language course that was offered. I feel it could of been more intensive, I found I was learning things about the language before they were tought in class. An empahsis on conversational and colloquial words and phrases was highly overlooked.

There are too many international (mostly American) students in Florence, making it harder to speak Italian outside of class.

It would be difficult to say...things change faster than one would think in a city the size of Florence! Borgho Antico in Piazza Santo Spirito has wonderful Risotto! Try a "Caprioska alla Fragola" at any bar! There was always something to "wander into" in Florence - festivals and the like.

Travel a lot, experience a lot of cultures, but be sure to stay in your city because you want to get to know it as much as possible. Be open and indulge.
